I can remember as a girl picking tomatoes from our family garden my mom would always say Your father always plants enough food to supply a small army Summers in Ohio are always hot and humid so it seemed like it was at least 100 degrees when the tomatoes needed picking Then began the chopping of the green peppers and the onions that would need to be added to the tomatoes In my memory it took all day but in reality it was probably only a few hours The stewed tomatoes were great in the winter months when we made what we called Chopped Suey My parents are from Maine and that is what they called this dish made with stewed tomatoes macaroni and hamburger She had quite a stash of these tomatoes even canning them while she was receiving chemo treatments It was the winter after her passing that I realized that someone would need to learn to can these tomatoes How could I cook the chop suey and chili without them This could not be We were down to the last few jars something had to be doneMy mom left me all of the supplies that I would need to complete the task but I had no recipe I searched the internet and old cookbooks for a recipe I finally found one that I thought sounded like what I remembered I was very apprehensive about doing this so I enlisted the help of a good friend from church that knew how to can She agreed to come and walk me through the process I did not have the confidence that I could do this We settled on a date bought some tomatoes from a farmer in town and I was readySeeing the tomatoes in the large pot starting to boil it bought back a flood of memories
