Water is the most familiar and abundant liquid on earth In solid liquid form it covers about 70 of the earths surface The unique properties of water make life possible on Earth Water characteristics such as adhesion and cohesion surface tension and high heat capacity affects the organism of the Earth The hydrogen bonds between water molecules results in two important properties adhesion-an attraction between dissimilar substances and cohesion - and the attraction between similar substances Acting together adhesion and cohesion are responsible for capillary action which allows water to move through the roots of plants and through the tiny blood vessels in our body Plants and trees couldnt survive without capillary action Plants put down roots into the soil which are capable of carrying water from the soil up into the plant Water which contains dissolved nutrients gets inside the roots and starts climbing the plant tissue through cohesion Also capillaries are the tiny blood vessels in our body The blood is mostly water and capillary action assists in the pumping action of your heart to help blood keep moving in our blood vessels Another property of water is its high resistance to vaporization The heat required to convert 1 gram of liquid water to water vapor is 540 cal The vaporization of water is retarded by hydrogen bonds Water must absorb a considerable amount of heat before the molecules break and the molecules escape as a gas Waters high resistance to vaporization is significant to animals such as ourselves who rely on the evaporation of water from our body surface as a cooling device When perspiration evaporates on the skin it cools it and lowers its temperature This also lowers the temperature of the blood as it circulates through the skin Furthermore water has a very high specific heat - the heat needed to raise the temperature of 1 gram of water 1 degree Celsius Water freezes slowly
